Low Fat Crock Pot Corn Chowder

I’m a sucker for corn chowder. I’ll admit it – there’s something about the warm creaminess of it that makes it one of my favorite winter comfort foods. BUT… what makes corn chowder so delicious is often loads of cream and tons of butter. It was hard to imagine a delicious tasting chowder that would also be low in calories. That’s what makes this recipe such a find. Amazingly, it has no actual cream and just 1 tablespoon of butter for 7 servings. Throw the ingredients in your slow cooker in the morning and you’ll have some steaming chowder to come home to.

Crock Pot Corn Chowder

1 lb frozen whole kernel corn

1 large onion, chopped

1 celery stalk, chopped

1 tbsp butter or margarine

1 ½ cups potatoes, diced

1 cup water

2 tsp chicken bouillon granules

½ tsp dried thyme

½ tsp salt

½ tsp pepper

½ tsp dried dill

6 tbsp flour

3 cups fat free milk

Combine all ingredients except flour and milk in a 3 ½ or 4 quart slow cooker. Cook on low 8-9 hours, or until potatoes are tender.

In a separate bowl, mix flour and milk until smooth. Stir slowly into corn chowder until thickened.
